I'm Rudy Garcia, and I cook for Salem. You might know my award-winning truck from the street — Curbside Bistro — and now Pop-in' Bistro takes that same food anywhere you need it.

That's the whole idea behind the Pop-in: a backyard, a vineyard, an office park, a wedding barn. You pick the spot, I pop in, and your people eat well.

My kitchen is a scratch kitchen — sauces, stocks, dressings, everything — and it can accommodate any dietary needs. Thank you for the opportunity to share my love of food with you.
